Heaven, Earth and Hell

Such a catchy name for a dish. This one is as German as you can get. In its essence, it’s a mix of mashed potatoes, apples and pork – mostly black pudding. It’s very simple to make. If you’re curious about the name – the heaven refers to the apples growing above, the earth to the potatoes (and root veg) and the hell to the black pudding/ meat.

Ingredients (serves 4):

  • 5 large apples
  • 1 large onion
  • 1 garlic clove
  • pepper, salt
  • 2tbsp brown sugar
  • 1tbsp honey
  • 1tbsp oil
  • 4 large potatoes
  • 1 carrot
  • 1 parsnip
  • milk
  • 8 sausages
  • 200g black pudding, diced
  • 3 rashers streaky bacon, diced

Peel the potatoes and chop with the parsnip and carrot. Boil until soft enough to mash. Mash with milk, salt and pepper.

Fry the sausages on all sides until almost done. Add the black pudding and bacon and cook thoroughly.

Slice the onion and apples. Fry with the chopped garlic clove, then add sugar, salt, pepper and honey to taste.

Pile the mash onto the middle of the plate, add 2 sausages with black pudding each and a little of the apple mix.
