Busy Mum’s Kitchen: Cheat Lasagna

You know when you’re having one of those days when you really need to dish up something that’s not another stir-fry, but you don’t have time for a full bake? Well, Cheat’s Lasagna might just be your life saver. It’s essentially a layered stir-fry, but you’d never guess.

(Serves 4-5)

  • 250g minced beef
  • 2tbsp olive oil
  • 1 large onion
  • 2 garlic cloves
  • 3tbsp red lentils
  • 1tbsp tomato puree
  • 1 tin chopped tomatoes
  • 200g passata
  • 250g mushrooms
  • 2tsp dried oregano
  • 1 1/2 tsp dried sage
  • 1tsp dried majoram
  • 1tsp dried thyme
  • 1tsp dried basil
  • 1/2 tsp pepper
  • 75g mature cheddar or 50g parmesan cheese
  • 4 large, plain tortilla wraps

Pre-heat your oven to 180°C. Use a food processor to dice the onion and garlic, then fry in olive oil. Add the mince, pepper and herbs and fry until lightly browned, then add the lentils and tomato puree and fry for a further minute. Use the food processor to dice the mushrooms and add to the mix, fry for a further 2-3 min, then add the chopped tomatoes and passata. Simmer while grating the cheese.

In an ovenproof dish, layer a tortilla wrap, sauce and cheese. Keep layering until all wraps are used; top the final wrap with a handful of cheese and bake at 180°C for 10-15min until the cheese has melted.
