Healthy Eats: Cauliflower and Broccoli Bake

If you’re planning on adding more vegetables to your meal while simultaneously convincing your husband and children that your food is still delicious, a cauliflower and broccoli bake might be your best friend. Quick to make and full of goodness, this is one of my weekday go-to recipes. The recipe serves 4.

  • 4 large potatoes
  • 1 large broccoli
  • 1 large cauliflower head
  • 1 large onion, chopped
  • 8 rashers of streaky smoked bacon, chopped
  • 75g mature cheddar, grated
  • 500ml semi-skimmed milk
  • 75g plain flour
  • 50g butter
  • breadcrumbs
  • salt, pepper
  • 1/2 tsp chopped garlic
  • 1tbsp nutmeg

Peel the potatoes and separate the florets on the broccoli and cauliflower. Chop the stalks into large pieces and cut the potatoes onto chunks. Boil all 3 together in a large pot until soft. Pour into a lightly greased, deep baking tray and mix until evenly distributed. Add the nutmeg.

In the meantime, melt the butter in a separate pot and fry the onion and garlic, then add the bacon and fry until done. Stir in the flour and then gently add the milk, stirring all the while until the flour has dissolved. Add the salt, pepper and a little bit of the cheese and simmer until the sauce has thickened.

Stir the sauce into the vegetable mixture and cover with the grated cheese and some breadcrumbs, then bake in an oven preheated to 200C for 10-15min.
